Make ready 245 g flour
Get 125 g cold butter
Get 130 g water
Get 3 egg yolks
Make ready 30 g sugar
Get 16 g flour
Make ready 260 g milk
Get 3 apples
Get 1/2 a lemon juice
Make ready 20 g butter
Take 10 g water
Prepare 40 g brown sugar
Make ready 1/4 tsp salt

Warm apple slices are sugared and coated with cinnamon, and arranged in the bottom of a pastry crust. Mix the shortening and flour together. Pour the egg mixture to the flour mixture.
Instructions to make Custard apple pie:
Cut the chilled, cold butter into cubes and add it into the flour and salt.
Combine the butter into the flour using your fingers until it looks like coarse breadcrumbs. Add in the water until a dough forms. Chill for half an hour to one hour.
Take out the dough and roll it out into a rectangle. Fold both sides of the dough on top of each other and chill dough again for half an hour.
Prepare the custard. Combine egg yolks and sugar in a bowl until egg yolk is pale yellow. Add in the flour.
Heat up milk and add vanilla extract into it and heat it until it comes to a simmer.
Add the milk slowly into the egg yolks (so it won't cook the eggs) and combine.
Add the egg mixture back to the pot on low heat until the mixture thickens.
Pour the custard into a bowl and let it cool, cover with cling film.
Take out the dough and repeat step 3.
Prepare the apple filling. Peel and cut up the apples. Add in the lemon juice and cinnamon and mix.
Add in the butter, then the apple. Stir till all the apples are coated with mixture. Let it boil on medium heat until most of the liquid is gone.
Take out the dough and repeat step 3 one more time. Roll the dough onto a pie/tart pan. I used an 8 inch pan.
Cut the excess dough into thin rectangle strips.
Pour the custard into pie pan then the apples. Place the thin rectangle strips of dough as seen in picture or however you want. Brush the top with egg wash.
Bake in preheated oven of 200 degrees Celsius for 20 minutes, then reduce temperature to 180 degrees Celsius and bake for another 20 minutes.
Let it cool slightly and serve warm.
Mix the shortening and flour together. Pour the egg mixture to the flour mixture. Then add the salty solution slowly. Massage the mixture into a dough. Cover the dough with a dry cloth and leave it to sit on a bowl for half an hour.
