  1. Prepare 6 Boneless Chicken Thighs
  2. Prepare 2 Red onions Chopped
  3. Prepare 4 cloves garlic Chopped

  5. Get 300 gm Long Grain Rice (Pre Soaked)
  6. Take 1 can mixed Beans
  7. Take 2 tsp dried Oregano
  8. Take 2 tsp Cumin
  9. Take 1 tsp Paprika
  10. Take 3 tbsp Red Wine Vinegar
  11. Make ready 1 pt Chicken stock
  12. Make ready 180 gm Smoked Bacon Lardons
  13. Take Juice & Zest of 1 Lime
  14. Prepare 2 tbsp chopped Coriander
  15. Get S&P
Instructions to make Cuban Chicken & Rice:
  1. Season chicken & fry in hot pan till browned on both sides. Set aside
  2. Add onions & Bacon & cook for 5 mins.
  3. Add herbs & spices fry for 1 min then add vinegar & cook till evaporated.
  4. Add rice cook dry for 1 min. Add stock & bring to the boil. Add chicken, peppers & beans. Cover & cook for 15/20 mins till rice is cooked. Be careful not to overcook.
  5. Remove from heat add zest, juice & herbs season to taste & serve.
