The ingredients needed to make Kadai Chicken:
  1. Prepare -500gms Chicken
  2. Get -3tbsp Oil
  3. Take -2tbsp ghee
  4. Take 1 big onion paste and 1small onion (cubed and layers separated)
  5. Take Half capsicum (cubed)
  6. Get 1 medium tomatoes (pureed)
  7. Prepare 1 teaspoon chili powder
  8. Take 2 teaspoon Kashmiri chili powder
  9. Take 1/4 cup plain yoghurt
  10. Take 1 teaspoon kasuri methi
  11. Take 1 teaspoon salt or as needed
  12. Get 1/2 teaspoon sugar
  13. Make ready 1 tbsp Ginger garlic paste
  14. Take 4 green chili,
  15. Take Karahi masala ingredients
  16. Prepare 1 teaspoon coriander seeds
  17. Get 1 teaspoon fennel seeds
  18. Make ready 1 teaspoon cumin seeds
  19. Prepare 1 dry red chili
  20. Prepare 1 teaspoon black pepper
  21. Get Karahi masala
  22. Make ready as required Dry roast coriander seeds, red chili, black pepper,cumin seeds until crisp.cool and powder coarsely
Steps to make Kadai Chicken:
  1. Heat a pan with ghee,Fry cubed onions and capsicum for 5 mins when they smell good,set them aside in a plate
  2. Add 3tbsp oil and 1 teaspoon ghee then add 1 teaspoon cumin seeds and 2 dry red chili.When the cumin and red chili begins to crackle add onions and ginger garlic paste and fry till the raw smell disappears.
  3. Add chicken and saute for 4 mins then add chili powder,tomato paste,karahi masala,Kashmiri red chili powder.stir and cook uncovered till the raw smell of tomato paste goes away.This takes around 5-6 mins on a low flame.
  4. Then cover and cook until the chicken is soft and fully cooked.Then add yoghurt mix and cook for 20mins.
  5. Then add fry cubes onions and capsicum,green chili mix and cook for 5-6 mins.
  6. Then add sprinkled crushed kasuri methi and karahi masala and cook for 5 mins
  7. Garnish karahi chicken 2 green chili and red chili and onion cubes
