Make ready 1/2 cup fresh mint leaves
Get 1/2 cup fresh coriander leaves

Take 1 lime juice
Prepare Regular spices:-
Take 2 teaspoons red chilli powder
Get 1/4 teaspoon turmeric powder
Make ready 3 teaspoons salt
Make ready 1 tablespoon ginger garlic paste
Make ready 1/4 teaspoon Garam masala powder (homemade)
Prepare Essence:-
Make ready 1 teaspoon saffron essence
Take 1 teaspoon yellow food colour (liquid) if using powder add 1/2 teaspoon with milk and strands of saffron
Get Hard spices:-
Make ready 4-5 cinnamon sticks
Get 6-8 cloves
Get 6-8 green cardamoms
Take 1/4 teaspoon shahi jeera (black cumin)
Take 2 tablespoons Ghee
Instructions to make Authentic chicken dum biryani:
Take a bowl add fresh chicken washed & cleaned now marinate with curd & all spices as shown in the picture below. Also add some oil from fried onions then add fried onions. Cover it and let it rest for about an hour also wash and soak rice with hard spices and 2 teaspoons salt 1 teaspoon will add in marinated chicken.
Once it is marinated well it oozes oil layer at this point can taste spices accordingly take a wok in which we will be preparing dum biryani apply some oil at the bottom in wok and pop the marinated chicken and spread a layer set aside. Further we will cook rice 70% in another wok and Drain its water.
Now pop all the rice layer on chicken and add yellow food colour & saffron essence also garnish with some coriander leaves and sprinkle some Garam masala powder. Cover the lid very nicely so that it’s steam is within and set it on stove on medium flame for 10 minutes then set it on low flame burner for about 15 minutes. Just dip and spatula and if it comes wet agin set it on low flame for 5 more minutes if it’s dry it’s done. Off the flame and let it settle for 10 minutes before serving.
Over deliciously awesome aromatic chicken dum biryani is ready to relish with salad,raita,mirchiyon ka salan.
