  1. Get Boneless chicken cut into small cubes
  2. Make ready 1 Tablespoon oil

  6. Prepare 1/3 cup( 42g) all-purpose flour

  10. Prepare 1 cup (155ml) heavy cream
  11. Take Salt to taste
  12. Prepare 1 teaspoon mix dry herbs

  14. Get 1/2 teaspoon crushed red chilies
  15. Make ready Green onion or chives for topping (optional)
Steps to make Cream of chicken soup:
  1. Put oil in soup pot over medium heat and cook the chicken until crisp and browned. Remove chicken pieces and set aside, leaving the oil in the pot.
  2. On in the same pot Add butter and chopped onion and cook over medium heat until onions are tender (3-5 minutes).
  3. Add garlic and cook until fragrant (about 30 seconds).
  4. Sprinkle the flour over the ingredients in the pot and stir until smooth (use whisk if needed).
  5. Add diced potatoes to the pot along with chicken broth, milk, heavy cream, salt, pepper, crushed chili and mix herbs. Stir well.
  6. Bring to a boil and cook until potatoes are tender when pierced with a fork (about 10 minutes).
  7. Reduce heat to simmer and remove approximately half of the soup to a blender (be careful, it will be hot!) and puree until smooth
  8. Return the pureed soup to the pot
  9. And add chicken pieces, stir well. - Allow soup to simmer for 15 minutes before serving.
  10. Top with additional crispy fried bread, chicken, cream, green onion, or chives. Enjoy!
