Get For making gaja dough
Prepare 2 cup refined flour
Take 1 tsp ghee

Instructions to make Khaja Recipe:
Take a mixing bowl,seive refined flour,baking soda together.
Add 1tsp of ghee &2 tbsp of oil to the dry ingredients & softly mix with your fingers.
Add water gradually with the help of a spoon.It should be of a soft consistency so that it can be rolled easily.
Cover it with a samp muslin cloth & keep it aside for 10 mints.
Take a tsp of flour.& a tsp of ghee mix in it in a small bowl.This will be the pastry gum.
Divide the dough into equal parts & make small balls from it.On a lightly floured surface take a ball & roll it into a circular disc.
Take the second ball & roll it into disc of almost the same size as the first one.
Spread a little.pastry gum on the top surface of one circle disc & cover it with another one.Again smear the top of the second circular disc with little pastry gum.
Cut this sandwich tortiles into half horizontally.Take one half,roll it tightly to a long cut 1" piece to a long thin rectangle like shape of a tough.
Repeat with the other half & keep it.covered at all times.
Deep fry the gajas.Remove excess oil with the help of a kitchen towel.
Now take a saucepan,add 1/4 cup water & 1 cup sugar to make sugar syrup of perfect consistency.
As soon as the sugar melts & water starts to boil.,switch off the gas.
Put the gajas in this sugar syrup & let it soak the sugar syrup for 5 mints.
