Get 2 cup all-purpose flour

Take 1/2 cup green peas
Get 1 big tomato chopped
Make ready 1 inch ginger grated
Get 2-3 chopped green chilli
Take 1/4 tsp hing
Take 1/2 tsp turmeric powder
Prepare 1/2 tsp red chilli powder
Take 1 tsp coriander powder
Get 1 tsp Kasuri methi
Make ready 2 tbsp coriander leaves
Make ready 1 tsp gram masala powder

Instructions to make Koraishutir Kochuri/Green Peas Kachori and aloo dum:
Dry roast the whole spices in a pan for 1-2 minutes. Switch the flame off. Cool it. Make a coarse powder of roasted spices in a mixer jar.
Grind the green peas and green chilli in a mixer jar. Make a smooth paste.
Heat oil in a Karachi. Add cumin seed and hing. After a few second add the green paste. Cook it on medium flame. Add salt. Cook for 1-2 minutes. Add 2-3 tsp of powdered masala. Cook for another few minutes.
When the mixer leaves the edges of the pan then switch the flame off.
In a bowl take all-purpose flour. Add salt and two tbsp of oil. Mix it to turn into a crumbly mixture. Add warm water to the flour mixture. Knead a soft dough. Cover it and rest it for 10 minutes.
Divide the dough into equal portions. Take one ball and flatten it. Place one spoonful of stuffing in the middle. Seal it and make a stuffed ball. Repeat the process for rest of the balls.
Take a rolling board and rolling pin. Roll out each of the stuffed balls like puri.
Heat oil in a Karahi. Fry all the kachori in medium flame. Fry both the sides.
In a pressure cooker boil the potatoes for 5 minutes or until it become soft. Peel the skin and cut into small pieces.
Heat mustard oil in a karahi. Add 1/2 tsp of cumin seed and hing. After a few second add grated ginger. Stir. Add chopped tomatoes and green peas. Stir.
Now add salt, turmeric powder, coriander powder, chilli powder, garam masala powder and kasuri methi. Cook for 2-3 minutes on medium flame.
When tomatoes are soft and oil realises in the pan add boiled potatoes and green chilli. Cook for 2 minutes. Add water. Boil for 2-3 minutes. Switch the flame off.
Garnish with chopped coriander leaves. Serve with matar kachori.
