  1. Soak sago in water overnight or for 6-7 hours. Keep in mind that the level of water covering the sago is only about 2-3 inches from the top.
  2. Drain away any excess water using a sieve.
  3. Place the sago in a large microwave safe dish / steamer, add olive oil, sugar and salt and mix.
  4. Microwave this mixture for 3 minutes, take it out once, stir gently, then cook it again in the microwave for 3 minutes.
  5. If you want, you can also steam it for 8-10 minutes in an electric steamer. I steamed the sago for 6 minutes in a microwave safe steamer. According to Madhuri ji, steaming and cooking the sago beforehand helps in making the khichdi fluffy and non-sticky.
  6. Heat ghee in a Kadahi, add the cumin seeds, green chillies and curry leaves and allow them to crackle.
  7. Add the boiled and diced potatoes, mix & cook.
  8. Add the steamed Sabudana, mix in gently.
  9. Coarsely grind the roasted peanuts and mix them into the mixture. Cook for a few seconds while stirring.
  10. Add the chopped fresh coriander, mix well and take off heat.
