The ingredients needed to make Special Zarda:
Make ready 1 kg Seela Rice
Take 1 kg Sugar
Prepare 6-8 pieces Green cardamon
Make ready 2-3 Cinnamon sticks

Make ready 100 grams Almonds
Get 50 grams Raisins
Prepare 1 cup Fresh milk
Get 1/2 kg Mix mithae (chum chum, gulaab jamun)
Take 1/2 kg khooya
Prepare 250 grams Red Ashrafi murabba
Prepare 250 grams Green Ashrafi murabba
Steps to make Special Zarda:
Soak the rice for 2 hours in water. Then boil them (ek kanni ubaal lein) in a large pan. While boiling them add the food colour and mix it well.
Now in a pan, warm 250 grams of oil and add mentioned amount of cardamon, clove and cinnamon sticks to it. Fry properly, when you smell aroma add 1 glass of water and the pan.
Add sugar to the pan mentioned in step number 2. When the sugar dissolves properly then add boiled rice. Cook it on high flame and once the water dries add raisins, almonds and milk and leave it on dum for 15 minutes.
After 15 minutes dish out the Zarda and garnish it with Khoya, Ashrafi and mithae and serve it.
