Prepare 1/4 kg handvo flour (ready available)
Prepare 11/2 cup curd
Prepare 1 cup finely chopped fresh spinach leaves
Prepare 1 cup grated bottle gourd/ dudhi
Take 2 tbsp green chillies ginger paste
Make ready 1/4 tsp asafoetida
Get To taste Salt
Make ready 1/2 + 1/2 tsp soda bicarb
Prepare For tempering to add in handvo fermented batter
Take 1 tsp oil
Prepare 1/2 tsp urad dal
Prepare 1/2 tsp mustard seeds
Get 1/2 tsp cummin seeds
Make ready leaves Few curry
Take 1/4 tsp turmeric powder
Take For preparation of handvo
Prepare 6 tbsp oil
Make ready 2 tsp white sesame seeds
Take As needed Tomato ketchup or green chutney for serving
Steps to make Spinach Handvo:
In mixing vessel add handvo flour and curd(whisk). Add enough warm water to make semi thick batter. Cover and keep for fermentation overnight or 6-8 hours. Next day in fermented batter add chopped spinach, grated bottle gourd, green chillies ginger paste, asafoetida and salt..mix well.
In small tadka pan add and heat oil add urad dal..saute till pink..add mustard and cummin seeds as they splutter add curry leaves and turmeric powder, off the flame..pour this tadka on handvo fermented batter. Mix well. Divide this batter into two equal portions.
Add soda bicarb to one portion of prepared handvo batter. Mix gently. Heat oil in nonstick pan,add sesame seeds as they splutter add handvo batter. Cover and cook on low heat until lower part turns crispy golden brown.
Flip and cook until lower part turns crispy golden brown.
Serve Delicious Hot Spinach Handvo with Tomato Ketchup or green chutney.
