Ghee Rice is one of the most favored of recent trending meals on earth. It is easy, it is fast, it tastes delicious. It’s enjoyed by millions every day. Ghee Rice is something that I have loved my whole life. They are fine and they look wonderful.

To begin with this particular recipe, we have to first prepare a few components. You can have ghee rice using 22 ingredients and 6 steps. Here is how you can achieve it.

The ingredients needed to make Ghee Rice:
  1. Get 370 g (13 oz) basmati rice
  2. Get 3 Tbsp ghee (clarified butter)
  3. Get 2 pandan leaves, rinsed and cut into 10-cm (4-inch) lengths
  4. Make ready 800 ml (26 fl oz) / 31/4 cups) water, mixed with 4 Tbsp fresh milk
  5. Get 1 tsp salt
  6. Prepare Whole Spices
  7. Get 2.5 -cm (1-inch) length cinnamon stick
  8. Make ready 2 star anise
  9. Prepare 3 cardamom pods
  10. Prepare 3 cloves
  11. Take Spice Paste
  12. Prepare 2 shallots, peeled
  13. Prepare 2 cloves garlic, peeled
  14. Take 5 -cm (2-inch) knob ginger, peeled
  15. Take Garnishing (Optional) A handful of roasted cashew nuts
  16. Prepare 1 handful cranberries
  17. Prepare 1 Tbsp crisp-fried shallots
  18. Get 1 handful coriander leaves
  19. Take Colouring (Optional)
  20. Make ready 1 pinch orange food colouring powder
  21. Take 1 pinch yellow food colouring powder
  22. Prepare 2 tsp water
Steps to make Ghee Rice:
  1. Rinse the rice and drain. Set aside.
  2. Pound the ingredients for the spice paste coarsely using a mortar and pestle. Set aside. Heat the ghee in a heavy-bottom pan over medium heat. Add the whole spices and fry for a few seconds until fragrant. Add the spice paste and pandan leaves and fry for 2 minutes until the mixture is slightly dry - and fragrant.
  3. Add the water and milk mixture and salt. Bring to a boil. - Add the rice and stir gently to mix. Turn the heat down and let it simmer until all the liquid has been evaporated or absorbed. Alternatively, cook the rice using a rice cooker.
  4. At this point, you can add some colour to the rice, if desired. Mix the orange and yellow food colouring powders separately with 1 tsp water. Sprinkle over the cooked rice and let it sit until you are ready to serve.
  5. Stir the rice to mix the coloured grains.
  6. Dish out and garnish with cashew nuts, cranberries, - crisp-fried shallots and/or chopped coriander leaves. Serve hot.
