Instructions to make Sweet & Sour Drumstick Sabzi With Roti -Gujarati Style:
  1. First, make a soft dough to make roti. Add water in wheat flour as needed. Apply little ghee, keep aside for rest.
  2. Cut drumsticks in small finger size in length. Keep in cooker with little water, add a pinch of salt, steam till 3 whistles, turn off gas, wait to cool completely.
  3. Take a kadai, add dry besan on very slow flame till aroma comes out. Make sure besan colour should not be changed. Transfer in a bowl. Take curd, churn well, add little water to make thick buttermilk. Now add roasted besan in buttermilk, churn well.
  4. Now in same kadai, add oil, mustard seeds, cut green chillies and hing. Now add steamed drumsticks with water, flame should be medium, add salt, sugar, red chilli powder, turmeric powder, coriander powder, boil for a minute, now add besan buttermilk gradually, stir continuously to avoid lumps. Mix well, stir till sabzi turns semi thick. Turn off gas. Ready to serve hot.
  5. Heat a tawa on medium flame of gas, take dough, smooth it, make equal size of balls to make rotis, take 2 balls roll in puri size, apply ghee and dusting flour, put one on another, rub in flour, make big size roti.
  6. Put on tawa, roast both side, flips it, roast perfectly, take out from tawa, open roti in 2, apply ghee on both rotis, make all rotis in same process.
  7. Ready to serve sweet & sour drumstick sabzi with rotis. Garnish with fresh chopped coriander.
