First of all, wash, peel and grate haldi with medium size grater.
Prepare spring onion, green garlic, coriander leaves, and tomatoes.
Heat ghee in a pan and add whole spices to it. Now add grated haldi to it and cook it until haldi is light and changes its color. This will take around 5 to 7 minutes.
Now add ginger, garlic, and green chili paste to it and cook it for a minute. Add spring onion and green garlic to it and mix it very well and cook it for 2 minutes.
Now add peas and tomatoes along with chili powder, salt, and coriander-cumin powder. Mix it well and cook it on medium heat for 5 minutes. Now mix yogurt with a half a cup of water and add it to the subji. Mix it well and cook it for 2 to 3 minutes on medium heat.
Add coriander leaves and turn off the heat.
Serve haldi ki subji with bajra roti, jaggery, and ghee.
