  1. Take 1 cup Grated Lauki/Doodhi/bottle gourd
  2. Get 1/2 cup Onion paste
  3. Take 1 cup Tomato paste

  6. Take 1 cup Besan
  7. Take 1/4 cup Rice flour

  10. Prepare 1.5 tablespoons Ghee
  11. Take 1 tsp Cooking oil
  12. Make ready 1 tablespoon Curd
  13. Get 1/2 tsp Ajwain
  14. Prepare 1 tsp Hing
  15. Prepare 1/2 tsp Aamchur/ dry mango powder
  16. Make ready 1 tsp Saunf/ fennel powder
  17. Get 1 tsp Garam masala
  18. Take 2 teaspoons Turmeric powder
  19. Prepare 1/4 cup Chopped coriander leaves
  20. Get as per taste Salt
  21. Get as needed Water
Instructions to make Lauki ke Gatte Ki Subji:
  1. First, check if the bottle gourd is good in tatse and not bitter. Discard if it's bitter and use another one. Take the grated bottle gourd in a bowl. Add besan and rice flour.
  2. Add salt,1/2 tsp chilli powder, 1/2 tsp Turmeric powder, a pinch of ajwain, hing, 1 tsp oil and some chopped coriander leaves and mix well. Combine to form a sticky dough. Grease a steel shallow plate or box and press down the mixture into it.
  3. Steam the mixture in a whistle less pressure cooker or steamer for 15 minutes on medium heat. Then let it cool completely.
  4. Then cut it out to small blocks and keep covered. Then heat ghee in a pan or kadhai. Then add Mustard, cumin seeds and chopped green chillies. Saute' well.
  5. Then add onion paste, ginger garlic paste, and cook well. Then add the spices, whisked curd and some water to the gravy, cover and cook well till ghee leaves from the gravy.
  6. Then adjust the spices, and add the cubes of Lauki Gatte. Mix all well and cook further 5 minutes. Then take off from flame, garnish with chopped coriander leaves. Serve hot with steamed rice or chappatis. Lauki ke Gatte ki Subji is ready! Enjoy.
