The ingredients needed to make Lemon Sponge and Berry Trifle:
  1. Prepare Sponge cake cut into squares about 2-3 Cm thick
  2. Prepare 400 g custard (I used tinned custard but you can make your own or use custard powder)
  3. Prepare 300 g mixed frozen berries - defrosted (I use fresh in the summer)
  4. Take 300 ml water
  5. Take Raspberry Jelly crystals or squares
  6. Make ready For decorating - whipped cream, toasted flaked almonds, grated dark chocolate
  7. Prepare Port or liqueur (optional and can be substituted with apple juice)
Steps to make Lemon Sponge and Berry Trifle:
  1. Use the sponge cake slices to line the base and part-way up the side of your serving bowl. Sprinkle with a little port/liqueur/apple juice
  2. Make the jelly following instructions on the packet - usually dissolve in 150ml boiling water and once dissolved, add another 150 ml of cold water. Pour over sponge and then add fruit. Allow or set in the fridge.
  3. After about 1 hour add the custard and return to the fridge.
  4. Just before serving decorate with whipped cream, flakes almonds and grated chocolates.
