Take Roasted veg
Take 450 g cherry of plum tomatoes

Make ready 100 g pitted black olives
Get Mozzarella ball

Instructions to make Vegetable lasagne:
Preheat oven to 240°C.
Put tomatoes in bowl, cover with boiling water for 1 minute. Drain and skin tomatoes.
Chop all veg to about 1" thick and out in large bowl, add tomatoes. Grate in the garlic and tear in the basil leaves. Season with salt and pepper and pour in olive oil. Stir well and put on large oven tray lined with baking paper, in a single layer.
Cook for 30 to 40 minutes, till slightly browned.
Put milk, marg, flour, bay leaf and nutmeg in saucepan. Put heat to medium and stir/whisk constantly, till smooth, slightly thickened and bubbling. Turn heat to lowest and cook for 3 minutes. Take off heat and stir in 3 tbsp of parmesan. Add salt and pepper to taste.
Turn oven to 180°C.
In a 9" square tin (lined with baking paper) or china dish, put ¼ of sauce. Cover with a ⅓ of the veg and olives, then ⅓ of the mozzarella. Cover with a single layer of lasagne sheets. - Repeat till everything is used - should end with a final layer of sauce. Grate lots of parmesan in top.
Cook for 30 minutes.
