Take 1 cup Sabudana/sago
Prepare 2 Potatoes (Steamed and Mashed)
Get 1 tsp Cumin Seeds
Get 1/3 cup Peanuts
Make ready 1 tsp Ginger (Finely Chopped)
Make ready 3-4 Green Chillies (Finely Chopped)
Make ready 1 tsp Lemon Juice
Prepare 1/2 tsp Kashmiri Red Chilli Powder
Prepare 2 tbsp Coriander Leaves

Steps to make Sabudana Vada:
Rinse the sabudana well with water and soak overnight with sufficient water just to immerse it well. (Or you can soak it for 5 hours). The sabudana should absorb the water well and when you press it, it should be soft. Set aside.
Roast the peanuts till brown spots appear. Remove skin and crush to a coarse mixture.
To a large mixing bowl, add the soaked sabudana, cumin seeds, ginger, green chillies, kashmiri red chilli powder and salt. Mix well.
Add the crushed peanut powder.
Add the boiled, peeled and mashed potatoes.
Add the chopped coriander leaves.
Mix it well until it forms a dough.
Pinch lemon sized balls and shape into vadas. Make vadas of all the dough and set aside.
Heat oil in a deep frying pan. Add the sabudana vadas and cook on medium flame on both sides till golden brown in color.
Remove from pan and place on kitchen towel to absorb the extra oil.
Sabudana Vada is ready. Serve it hot with Coconut Coriander Chutney or any sauce or chutney of your choice.
