Gajar Ka Halwa is a classical Indian dessert, this is also known as gajrala. Gajar ka Halwa is a delicious and popular sweet made with few ingredients, carrots, milk, sugar and flavored with cardamom. Gajar ka Halwa is a popular North Indian pudding made with carrots, milk, sugar. During winters, I make gajar ka halwa often.

Steps to make Gajar ka Halwa / Gajrela:
  1. To prepare the carrot halwa washed, peeled and grated carrot is required. Peel the cardamoms and make the powder of it's seeds.
  2. Preheat the pan and add ghee in it to melt. Add the grated carrot in ghee and roast it on the low flame. Roast it for the 5 minutes. Add milk in the carrot after the 5 minutes. Cover the carrot and cook it on a medium flame for the 15 minutes. Cook the carrot until it is soft and stir it in once in between of the cooking process.
  3. Cook the halwa on high flame until it boils and stirs it continuously. Stop the continuous stirring once the halwa boils. Check and cook the halwa for 10 minutes. Cook the halwa until it is thick.
  4. After cooking the halwa for 10 minutes on high flame add raisins in it and mix them. Cook it more on high flame until it is thick.
  5. Once, the halwa is thick, add the chopped almonds, chopped cashew and sugar in it. Stir the halwa for a while and then halwa is ready. Cool down the halwa for a while and then take it out on a plate. Garnish it with the chopped dry fruits.
  6. Suggestions : Stir the halwa in intervals, make sure it won’t burn from the bottom. Cook it in the wok with the heavy bottom so that you can prepare it quickly.
  7. For khoya : add all the ingredients in the pan.
  8. When the mixture becomes warm, lightly knead and form into a ball. the khoya mixture will be sticky initially when kneading.
  9. Store instant khoya in an airtight container and then refrigerate. once khoya cools, it will become dense. grate khoya as required and then use it.
