The ingredients needed to make Bitter Gourd Curry: (Karele ki Sabzi):
  1. Take 2 Tbsp oil
  2. Take 250 g bitter gourd (karela) or 5 small to mediums
  3. Get 2 large onions or 2 thinly sliced
  4. Prepare 1/4 tsp turmeric powder
  5. Make ready 1 tsp red chilli powder
  6. Make ready salt to taste
  7. Get 1/4 tsp red chilli flakes
  8. Take 1/2 tsp garam masala powder
  9. Take 1 cup fresh or canned chopped tomatoes
  10. Prepare 1 lemon juice
  11. Take 1-2 green chillies chopped
  12. Make ready Handful cilantro chopped
Steps to make Bitter Gourd Curry: (Karele ki Sabzi):
  1. 🌻Preparation: - Rinse and cut bitter gourd (karela) in lengthwise remove the all seeds. Then chop in small pieces.
  2. 🌻TIP / If karela is very bitter, - then add some salt on chopped bitter gourd (karela) pieces. Mix very well and allow this mixture to sit for 15 to 20 minutes. Then rinse them bitter gourd and squeeze the bitter gourd very well. This will get rid of some bitterness from the bitter gourd.
  3. 🌻Making bitter gourd Curry: - In a pan or wok heat 2 tablespoons oil.
Let the oil become hot. Then reduce the flame to a low and add the chopped bitter gourd sauté on a low to medium-low flame. Stir often while sautéing.
 - Sauté the bitter gourd for 2 to 6 minutes or little nice golden in colour.  Then take out from the pan with slotted spoon and set aside.
  4. In same pan add thinly sliced onions if need more oil so add 2 Tbsp more oil. - Fry onion well till nice soft add all spices mix well then add 1 cup chopped tomatoes or canned tomatoes. - Fry 2-3 minutes or till all tomatoes cooked well. - Add bitter gourd mix well 1-2 minutes add green chillies and some cilantro, lemon juice and sprinkle garam masala cover and cook till all bitter gourd and onion cooked very.
  5. When the Curry is ready, 
Mix very well and then switch off the flame. - Serve bitter gourd with roti, parathas and naan. - You can garnish with some coriander leaves if you want.
  6. ✅Notes: - How to remove bitterness from bitter gourd - - if you get the bitter gourd which are very bitter, then mix some salt on the chopped bitter gourd and keep aside for 20 to 30 minutes. The salt extracts the bitterness. Rinse in water and then use in the recipe. Alternatively, you could also put them in salted water. Keep them in the salted water for 20 to 30 minutes. Rinse them with fresh water, squeeze and then add them to the recipe.
