The ingredients needed to make Boondi Ke Ladoo:
  1. Make ready Half cup besan
  2. Take 1/4 th cup water (for syrup)
  3. Make ready Half cup sugar
  4. Take 1 pinch yellow food colour
  5. Make ready 1/4 th tsp baking soda
  6. Take 1 pinch cardamom powder
  7. Prepare as required Melon seeds/pistachios (if available)
  8. Prepare 2 tbsp milk
  9. Get 1/4 th cup water (for besan paste)
  10. Prepare 1 cup Ghee (for frying)
Steps to make Boondi Ke Ladoo:
  1. First, take a bowl and add besan and baking soda to it. Mix it well. Now add water little by little and form a thin consistency paste. Then add a pinch of yellow food colour & mix it well. I have used yellow gel food colour.
  2. Now heat a kadai & put ghee into it. Heat the ghee well. Now with the help of any strainer, pour 2 tsp of besan mixture at a time and spread it all around the ghee. The drops falling will finally form the boondis. Fry them for few seconds and remove them on a plate. Repeat the same process with the rest of the besan paste. Now your boondis are ready. Keep them aside.
  3. Now take another pan. Put sugar in it. Add 1/4th cup of water and wait till the sugar melts. Then add few drops of yellow food colour & cardomom powder in the syrup. Mix everything well.
  4. Now add the fried boondis to it. Cook it on a low flame for about 6 mins. Then at this point of time, add melon seeds or pistachios, (if available) then again cook it for 3 to 4 mins. Finally little by little add 2 tbsp of milk to it. It would now form lumpy. At this point of time, switch off the flame. Let it cool down a bit. It should be bearable hot to form Ladoos. Donot make it cool down completely.
  5. Now start making your ladoos. Put a broken cashew over the ladoos. Finally put them on paper cups to get a "Halwai like feel".
